    Unbelievably Easy Tamale Pie

    Ingredients:

    1 lb. ground beef
    1/4 cup chopped onion
    1 envelope taco seasoning mix
    1 can (8 oz.) stewed tomatoes, drained and chopped
    1/2 cup frozen whole kernel corn, thawed and drained
    1/2 cup Bisquick 
    1/4 cup yellow cornmeal
    1 cup milk
    2 eggs

Instructions:

  • Heat oven to 400 degrees, spray pie plate with cooking spray.
  • Brown beef and drain, add onion and taco seasoning.
  • Spread meat mixture in pie pan and sprinkle with tomatoes and corn.
  • Stir remaining ingredients in bowl until well blended
  • Pour over mixture in pie pan and allow Bisquick mix to seep into meat mixture by slightly lifting part of the mixture. 
  • Bake 30 to 35 minutes until nicely browned.
  • Let stand for 5 minutes before serving.

This recipe is one of the easiest, quickest recipe around.  My family loves it.  They can't seem to get enough of it.  It is one of those recipes that you can make and take to a hot dish party.

For those who want a less fat kind of meal, simply replace the Bisquick mix with the Bisquick Light mix, the whole milk with low fat milk and the eggs with an egg substitute or 3 egg whites.  I will still be delicious but will have less fat and calories. 

Tip of The Day

The best toppings for tamale pie are soar cream or salsa.  If the pie is a bit spicy for you put a dollop of sour cream on your slice.  If you like spicy add salsa in the temperature you like it (mild, medium, or hot) and place a dollop of soar cream on top of it.
