Hi,
Every Sunday morning my husband and I make it a point to have a big breakfast. This past Sunday was my husband turn to make the breakfast.
I'm happy to say he outdid himself. He made his potato goulash and biscuits. Add a glass of Orange and you have a delicious and filling meal.
Looks delicious doesn't it?
Here it is on a plate - it certainly fills it.
Potato Goulash Recipe
Ingredients:
3 to 4 red skin potatoes, washed and chopped with skins on
1/2 cup onions, chopped
1/2 cup green peppers, chopped
1 cup ham, chopped
1/2 cup mushrooms, sliced
1/2 cup tomatoes, chopped
1/4 cup shredded sharp cheddar cheese
1 tbsp. canola oil
Directions:
Heat oil in large skillet.
Sauté on medium heat, ham, onions, peppers, and potatoes until potatoes are starting to brown.
Add mushrooms and tomatoes and mix well. Sautéing for another minute or two.
Spread cheese on top and let melt.
Serve immediately.
This recipe serves 3.
Note: This recipe is great with all kinds of meats. We've made it with sausage, bacon, roast beef, chicken, and pork.
It's also good with black olives, corn, peas, zucchini, green beans, and celery.
Don't be afraid to experiment. Make it your own.
Tip of the Day
For crispy fried potatoes, make sure the oil is hot before you put the potatoes in it. Also, never try to fry soggy or damp potatoes, you will have a pan full of mush.
