Leftovers

Today is what we in our home called "Fend for yourself day".  What is a fend for yourself day mean?  Probably exactly what you think it means.  It means, open the fridge door, take out a couple of plastic containers, put the food on your plate and heat it.

It is actually a clean out the refrigerator day.  We try to use up all the leftovers from the last few days so we don;t have to throw it out.  We have a day like this every now and then when the refrigerator becomes crowded with plastic containers.  

It is actually one of the days we like to just graze and enjoy the foods we like the best. Sometimes we just heat up what we want to eat and sometimes we get a bit creative.  Whatever we choose to do with the food, it becomes a fun, relaxing meal time.                                                                                                                                                                         


What Do I Do With The Leftovers?

I love stir-fry.  You can use virtually any meat and vegetable you have.  Add some rice and you have quite a meal.  It's filling, nutritious, and absolutely delicious.  Just look at that delicious looking stir fry image above.


Look at the soup above  It is made out of Thanksgiving leftovers. Delicious looking isn't it?

Who wouldn't love a salad made with leftover roast beef?

Whatever you choose to do with your leftovers be secure in the knowledge that you are not just throwing away food.  Enjoy your leftovers, many times they taste better the second time around.

Today is Chicken Day Why is today chicken day?  Mostly because I have a ton of chicken recipes to share with you.  We eat chicken so often I am surprised that we don't cluck.  Plus, chicken is so versatile you can use it in almost any recipe.   Besides that it is healthy and delicious.  But we will get to that later.  For right now, lets get on with the recipes. Beer Can Chicken Recipe Ingredients: 1  whole chicken, betwween 4 to 5 lbs. 2 tbsp.Extra Virgin Olive Oil  seasoning of your choice, I like to use Montreal Chicken seasoning by Grill Mates but you can use any seasoning or make your own 1/2 can of beer (what you do with the other half is your choice) Directions: Preheat the oven to 350 degrees.   Remove the neck, giblets and so forth from the chicken. July 22, 2013 Hi, Every Sunday morning my husband and I make it a point to have a big breakfast.  This past Sunday was my husband turn to make the breakfast.  I'm happy to say he outdid himself.  He made his potato goulash and biscuits.  Add a glass of Orange and you have a delicious and filling meal. Looks delicious doesn't it?       Here it is on a plate - it certainly fills it.     Potato Goulash Recipe   Ingredients:     3 to 4 red skin potatoes, washed and chopped with skins on 1/2 cup onions, chopped 1/2 cup green peppers, chopped 1 cup ham, chopped 1/2 cup mushrooms, sliced 1/2 cup tomatoes, chopped 1/4 cup shredded sharp cheddar cheese 1 tbsp. canola oil   Directions:   Heat oil in large skillet.   Sauté on medium heat, ham, onions, peppers, and potatoes until potatoes are starting to brown.   Add mushrooms and tomatoes and mix well.  Sautéing for another minute or two.   Spread cheese on top and l
