Love That Chicken


Chicken is one of the most versatile, healthy meat around.  You can bake it, broil it, barbeque it, roast it, boil it ... you get the idea.  You can use it in salads, soups, casseroles, by its self, stews, stir-fries, and so many more ways.

It is one of those meats that are not expensive, delicious, and nutritious. I use it all the time.   It is my main meat.  Today I will be sharing two terrific recipes that I am sure you will love.  Both are cooked in the crock pot and ready to eat when you walk in the door.

Crock Pot Chicken Pot Pie Recipe


Ingredients:
  • 3 tbsp. extra-virgin olive oil, divide
  • 2 lb. boneless, skinless chicken breasts
  • Sea salt
  • Freshly ground black pepper
  • 1 lb. baby red potatoes, quartered
  • 2 tbsp. margarine, softened
  • 5 cloves garlic, minced
  • 2 tbsp. fresh thyme
  • Freshly chopped parsley
  • 2 tbsp. freshly grated Parmesan cheese, plus more for serving
Directions:

1.   In a large skillet over medium-high heat, heat 1 tablespoon oil. Add chicken, season with salt and pepper, and sear until golden, 3 minutes per side. 

2.   Meanwhile, in a large slow cooker, toss potatoes with remaining 2 tablespoons oil, butter, garlic, thyme, parsley, and Parmesan and season generously with salt and pepper. Add chicken and cook on high for 4 hours or low for 8 hours, until potatoes are tender and chicken is fully cooked. 

3.   Garnish with Parmesan before serving.

 Crock Pot Chicken Stew Recipe

Ingredients:

  • 1 large boneless, skinless chicken breasts, cut into cubes 
  • 2-1/2 medium red potatoes, quartered 
  • 1/4 (8 oz.) package baby carrots 
  • 1/4 cup chopped celery
  • 1/2 (26 oz.) can condensed cream of chicken soup 
  • 1-1/2 cubes chicken bouillon 1/2 teaspoon garlic salt 
  • 1/4 teaspoon celery salt 
  • 3/4 teaspoon ground black pepper 
  • 1/4 (16 ounce) bag frozen mixed vegetables 
Directions:


Place all of the ingredients into the crock pot, turn on low and let cook for 8 hours.

  • The high amount of phosphorus helps keep our teeth, kidneys, central nervous system and liver stay healthy.
  • Selenium also found in chicken helps with thyroid, hormone, and immune system.
  • The Vitamin B6 keeps your blood vessels healthy and increases your energy level.
  • Niacin helps give you some protect from cancer and genetic damages (DNA).
  • Beta carotene, which chicken is high in, helps protect you eye sight and night vision.                                                                             Tip of the Day
  • Thaw frozen chicken using one of three methods: in the refrigerator; in a cold water bath, changing the water every 30 minutes; or in the microwave. NEVER thaw chicken at room temperature.
